Happy Spring! For those that don’t know me, you should know I love pie! What could be better than a smoked pie ?! Here is a recipe courtesy of Pine-Strawberry Fire District, who won the 2022 Cook Like a Firefighter Competition. Thank you to their amazing chef, Bill Potter, for introducing us to Smoke Peach Pie and Smoked Pecan Pie.

Smoked Peach Pie:

Prepare a pie crust (store bought is fine).

Combine:

  • ¾ cup of granulated sugar
  • 1/3 cup of cornstarch or flour
  • ¼ cup of light brown sugar
  • ½ teaspoon of ground cinnamon
  • 5-7 peeled and sliced peaches

Pour into the prepared pie crust.

Smoke at 225 for two hours, then increase the smoker to 350 for one more hour.

 

Smoked Pecan Pie:

Prepare a pie crust (store bought is fine).

Combine:

  • 1 cup of Karol syrup
  • 3 eggs
  • 1 cup of sugar
  • 2 tablespoons of melted butter
  • 1 ½ cups of pecans

Pour into the prepared pie crust.

Smoke at 225 for two hours, then increase the smoker to 350 for one more hour.
